[:de]One Pot Pasta von Marianne Zunner[:en]One Pot Pasta by Marianne Zunner[:]

[:de]

You might already heard of the phrase one pot pasta. Either positive or negative. I always wanted to try it, since I saw it the first time on the blog of Lottie and Doof. Unexplicably, I’ve never managed to try it.

Over the winter I wasn’t eager to cook at all. But something warm to eat every now and then would be nice. And then the new book One Pot Pasta by Marianne Zunner caught my eye!

I found a lot of interesting combinations when I first browsed through. But as I had nothing at home I tried the basic version with tomatoes and basil. The miserable basil remaints found a good death, too. After that I was hooked!
I think it is a great achievement to create recipes, which tells you only to throw everything in a pot and the end result is a delicious meal, without overcooked pasta nor a watery sauce! It worked like a charm!

Which could have been a conincidence.

One Pot Pasta von Marianne Zunner

But it wasn’t. Next time I tried the pasta with spinach and gorgonzola. Really really good! Next time I cooked pasta with walnuts, bell peppers and feta. Delicious! The measurements are pointed out very well. I use 100 ml less water for the spinach pasta to get a thicker sauce, but this is also depending on your taste. On the other hand I always add the cheese with the rest, because it doesn’t make a difference and I do not forget it in the end. The pasta with creamy salmon sauce is – of course- also a delight, and works both with smoked or fresh salmon. If I use fresh salmon I add it just when the dish is ready, so the salmon will not get dry and is still raw in the middle.

The cooking time of the noodles is always stated. I do not care about that and take the pasta I have at home and adjust the cooking time. I won’t start to buy the pasta with a suitable cooking time. In my experience the pasta takes about 2 minutes longer that stated on the package. For the rest of the ingredients that doesn’t matter at all.

I also tried cooking the double amount in a larger pot. This worked just fine and was no problem at all.

The book does not only offer classic dishes, but also some with an asian touch and gluten-free pasta which is combined with ingredients that fit with the pasta perfectly. These are interesting combinations, if you like to try something new. But you could also swap the gluten-free pasta with normal pasta.

Every dish is on the table in roughly 30 minutes, including preparation and cooking. Some even less.

I am very enthusiastic about One Pot Pasta by Marianne Zunner from Gräfe and Unzer and can only recommend it to everyone who loves pasta, but does want to cook quickly! Just take care that you won’t overeat on pasta, because everything is so easily prepared ;). You really notice that the author has tested the recipes extensively and how much water is necessary for every dish.
This book is great in every aspect, as well as the price!

[:de]grüne Bohnen mit Zitronenpasta und Knoblauchbröseln[:en]Green Beans on Lemon Pasta with Garlic Crumbs[:]

[:de]

I looked for a recipes with green beans and I got some good recommendations on twitter, thank you! Juliane hinted me some blog posts of her, which attracted me immediately. Green beans with pasta, lemon sauce and garlic crumbs!

This dish is whipped up in about half an hour and therefore perfect for a quick after work dinner! Nonetheless the pasta looks just delicious.

It is also very handy that you don’t need any special ingredients, so no after work shopping needed!

I do like green beans very much, but I think they are quite underestimated. Seldomely they are the star in a dish, but mostly used as a simple side dish, also in vegetarian meals. As I do not have any meat at home in the week, normally, we mostly eat vegetarian.

Before asparagus season is over again I have to provide you with this wonderful recipe for an asparagus salad with spätzle and crispy parma ham! It’s too good and great for hot days! And if it is not a hot day you could also serve it warm ;).

I adapted this recipe again from Harry Eastwoods A Salad for All Seasons* which has an amazing range of delicious salads for every season! And they are not only leaf salads, but really filling and varying dishes. I do not know why you still haven’t have this book at home ;)!

I made the spätzle myself at home, because I was spontaneous for dinner and I thought „this is a quick one“. But not when making the doubled amount… If you have a spätzle or knöpfle press at home this works quicker than how I did it or you just buy some fresh ones. That way it is a really quick dish ;). Do not use dried spätzle!

Orecchiette mit Cima di RapaOrecchiette with Cima di Rapa (Broccoli Rabe)

Recently I was in Italy and of course I shopped a lot of groceries there ;). I discovered some italian specialties , like cima di rapa. When I see something special like this I have to buy it! What I will do with, I’ll figure out at home. In this case I made an easy, but very delicious pasta dish, which features the cima di rapa perfectly!

Cima di Rapa is broccoli rabe, which was also more known in Germany in older days. Cima di rapa are long stalks with a lot of leaves and some little florets, like of broccoli. It tastes also similar to broccoli, sometimes a bit bitter, but mine was mild, maybe because it was very young. Very large leaves and thick stems should be removed and discarded, because they are especially bitter. The thick stems are also not tender anymore.

A very interesting vegetable, especially because it has a good mixture of leaves and stems. The stems are tender and crunchy and as those of broccoli very scrumptious!

Maccharoni and cheese are like sea and salt, fish and chips or potato dumplings with sauce. A perfect pair, which belongs together. And like dumplings with sauce this is true soulfood!

I wanted to give you this recipe for such a long time, but I never managed to take a good photo. This meal is so easy and you only need simple ingredients that are mostly at home after all. I make it when I’m out of ideas, lazy and hungry! After that I always want to eat in an instant and the daylight is already gone, too!

The photo isn’t what I would describe as a good photo to me. I tried my new softbox and after playing around with Lightroom a bit, the photo is usable. Although it isn’t good for my criterions, this is „only“ my blog and I need to stay realistic and show you the recipes I like the most ;). It’s autumn now (and feels like winter) and daylight is only there when I’m at work. And that are mostly the days when I’m making dishes like maccharoni and cheese.

I made this dish about 20 times and I’m in love every time! Maccharoni and cheese are not just pasta with cheese, but pasta with a bechamel-cheese-sauce, which makes this dish so damn good! This dish is definitely not on the light side, but therefor it’s vegetarian 😉 and a nice winter dish!

I use the recipe from the book The Pioneer Woman Cooks by Ree Drummond. The book is all about down-to-earth US dishes, spiked with some „extraordinary“ recipes by Ree. The Mexican influence is noticable, especially in a lot of breakfast recipes (like huevos rancheros for example). The sweet stuff is almost no edible, because it’s way too sweet, typically American. It’s the first book of Ree and it also shows her life at the ranch and her family. It’s very beautiful and equipped with step-by-step instructions like on her blog. If you want to dive in the typical American cliché, but long for working simple recipes, you are just right with this book!

Orecchiette mit dicken Bohnen und KräuternOrecchiette with fava beans and herbs

I’m admiring fava beans in a lot of english food blogs or cookbooks, but I’ve never seen them here in Germany! So last year I gave it a try and grew them on our field to satisfy my curiosity. I liked them very much and found them funny, too! It’s funny, that I discovered them last week in Rothenburg on the farmer’s market at the only vegetables stall there! I bought a lot in an instant and in the evening I cooked this pasta dish. The beans are cuddling in the orecchiette and are a perfect fit! With herbs, lemon, parmesan, olive oil and some garlic it’s a light and quick summer dish.

LasagneLasagne

Today I’m presenting a true classic on the blog: an italian lasagne with minced beef!  Lasagne is real soulfood, but you need some time for the preparation. Today I’m showing you my version of a lasagne with minced beef and béchamel sauce.

Basically it is possible to make a lasagne from everything, so you can also make a lot of vegetarian versions and get creative about that! But every now and then I come back to this classic one. How do like your lasagne best?

If you have some time and want to find your inner zen 😉 I recommend you to make the lasagne sheets yourself. That will make truly the perfect lasagne! I only made that once, but these sheets are the fastest kind of pasta to make, if that helps you for motivation ;). The lasagne is even better with homemade sheets and the best is the sheets can be made so they fit perfectly in the pan. That’s a huge plus here! You can also use the dough of these ravioli for the lasagne sheets.

By the way, the minced beef sauce is already a great bolognese sauce for pasta! So if you are afraid of the labour for the lasagne, just make the sauce and some pasta and enjoy!

Schnelles Abendessen: Pasta mit grünem Spargel und ZiegenkäseQuick and easy dinner: Pasta with Asparagus and fresh Goats Cheese

Besides green asparagus I’m a lover of goats cheese! It’s a delicacy no matter if hard or creamy (although I can’t stand soft cheese in general) and it should be a staple in my fridge all the time. I am delighted that it is possible to make so many great dishes with fresh goats cheese. I already have another post in queue, which awaits with a sweet surprise!

Mangold-Haselnuss-PestoSwiss Chard and Hazelnut Pesto

Although this month will be mostly about ice cream, we habe a lot of vegetables from our field to eat. Some of you with an own garden themselves might know these situations having some sorts of vegetables in abundance. Our zucchini, cucumbers and the squash are quite late this year. But we have a lot of swiss chard, lettuce and different kind of beans at the moment.

Last year I already introduced you to this mangold quiche. But one recipe isn’t enough when it comes to the abundance of swiss chard.

The stalks can be diced and frozen easily and the leaves can be used the make a delicious pesto, which can be also frozen. Like this I made half a dozen glasses of swiss chard pesto last year and it was a welcome change in the winter. It can be used either for pasta or as a pizza base instead of tomato sauce.
