Bevor die Spargelsaison bald vorbei ist muss ich Euch noch dieses tolle Rezept für einen Spargelsalat mit Spätzle und knusprigem Parmaschinken auf den Weg geben! Der ist einfach zu lecker und perfekt für warme Tage! Im Zweifelsfall könnte man diesen Salat sogar warm servieren ;).

Ich habe die Idee für dieses Rezept mal wieder aus Harry Eastwoods A Salad for All Seasons*, das einfach eine riesige Auswahl für hammerleckere Salate zu jeder Jahreszeit bietet! Das schöne ist, dass es nicht nur einfache Blattsalate sind, sondern sättigende abwechslungsreiche Gerichte. Ich weiß eigentlich nicht warum du dieses Buch nicht auch schon zu Hause hast ;)!

Ich habe meine Spätzle selbstgeschabt, da es eine spontane Dinneridee war diesen Salat zu essen und ich dachte „das geht doch ganz schnell“. Öhm naja, nicht wenn man die doppelte Menge macht… Wenn ihr eine Knöpflespresse habt (oder eine Spätzlespresse für kurze Spätzle) geht es schneller oder ihr kauft einfach gute Knöpfle aus dem Kühlregal. So ist es wirklich ein schnelles Essen ;). Auf keinen Fall getrocknete Spätzle verwenden!

Spätzle-Spargel-Salat mit knusprigem Parmaschinken

Vor zwei Jahren: grüner Spargel mit Taleggio und Haselnussbutter

Vor drei Jahren: Cannelloni mit Spinat-Ricotta-Füllung

Vor fünf Jahren: Himbeer-Schokoladen-Eis

Spätzle-Spargel-Salat mit knusprigem Parmaschinken

nach einem Rezept aus A Salad for All Seasons* von Harry Eastwood

ergibt: 2 Portionen

Zutaten:

  • 200 g frische Knöpfle oder kurze Spätzle
  • Meersalz
  • 6 sehr dünne Scheiben Parmaschinken, Serranoschinken oder magerer Frühstücksspeck
  • 350 g grüner Spargel
  • 3 EL Olivenöl
  • 3 EL Crème fraîche
  • 1 Bio-Zitrone, fein abgeriebene Schale und 1 EL Saft
  • Fleur de Sel Hibiskusblüte (z.B. von Lebensbaum) oder Meersalz
  • schwarzer Pfeffer, frisch gemahlen

Einen Topf mit Wasser zum Kochen bringen, salzen und die Knöpfle nach Packungsanweisung kochen. Abgießen und mit kaltem Wasser abschrecken.

Den Schinken oder Speck in einer Pfanne mit einem Esslöffel Olivenöl anbraten bis er zusammenschrumpelt und knusprig ist. Auf Papiertüchern (oder Geschirrtüchern, je nach eurer Ecofriendlyness 😉 ) abtropfen lassen.

Den Spargel waschen und die Enden abknipsen. In Stücke schneiden.

Den Spargel im Schinkenfett anbraten. Eventuell noch etwas Olivenöl zugeben, wenn nötig. Wenn der Spargel gar, aber noch bissfest ist vom Herd nehmen. Das dauert etwa 5 Minuten.

Den Schinken in Stücke brechen.

1 Esslöffel Olivenöl mit 1 Esslöffel Zitronensaft in einem Glas schütteln.

Die Crème fraîche glatt rühren.

Auf zwei Tellern die Knöpfle verteilen und mit dem Spargel toppen. Das Dressing in einem dünnen Strahl darüber verteilen. Den Pfeffer darüber mahlen und einen Klecks Crème fraîche auf jeden Salat geben. Den Schinken auf den Salaten verteilen. Mit Zitronenschale und Fleur de Sel Hibiskusblüte bestreuen um einen schönen Farbkick zu erhalten (oder einfach Meersalz).

Dieser bunte Salat ist eine echte Freude für’s Auge und darf sofort serviert werden!

Before asparagus season is over again I have to provide you with this wonderful recipe for an asparagus salad with spätzle and crispy parma ham! It’s too good and great for hot days! And if it is not a hot day you could also serve it warm ;).

I adapted this recipe again from Harry Eastwoods A Salad for All Seasons* which has an amazing range of delicious salads for every season! And they are not only leaf salads, but really filling and varying dishes. I do not know why you still haven’t have this book at home ;)!

I made the spätzle myself at home, because I was spontaneous for dinner and I thought „this is a quick one“. But not when making the doubled amount… If you have a spätzle or knöpfle press at home this works quicker than how I did it or you just buy some fresh ones. That way it is a really quick dish ;). Do not use dried spätzle!

Spätzle-Spargel-Salat mit knusprigem Parmaschinken

Two years ago: asparagus with taleggio and hazelnut butter

Three years ago: cannelloni filled with spinach and ricotta

Five years ago: raspberry chocolate ice cream

Spätzle Asparagus Salad with crispy Parma Ham

adapted from A Salad for All Seasons*  by Harry Eastwood

yields: 2 portions

Ingredients:

  • 200 g fresh knöpfle or short spätzle
  • sea salt
  • 6 very thin slices Parma ham, Serrano ham or lean bacon
  • 350 g green asparagus
  • 3 EL olive oil
  • 3 Tbsp crème fraîche
  • 1 organic lemon, finely grated zest and juice
  • fleur de sel (I prefer hibiskus from Lebensbaum here)
  • black pepper, freshly ground

Bring a pot of water to the boil, salt it and cook the knöpfle like the package instructions tell you. Drain and rinse under cold water.

Heat a tablespoon of olive oil in a large pan and fry the ham or bacon until crispy. Drain on a paper towel.

Rinse the asparagus and remove the ends. Cut into pieces.

Heat a pan with 1 tbsp of olive oil on medium heat. Sauté until done, but still crispy. That takes about 5 minutes. Remove from the heat.

Shake 1 tbsp olive oil and 1 tbsp lemon juice in a jar.

Stir the crème fraîche until smooth.

Distribute the knöpfle on two plates and top with asparagus. Pour the dressing over the salad in a thin stream. Ground the fresh pepper over it and add a dollop of crème fraîche to it. Top with the crispy bacon. Sprinkle the lemon zest and fleur de sel over it.

This colourful salad is a pleasure to the eyes and should be served immediately! Enjoy!
