Nach der Zucchinischwemme haben wir nun eine Möhrenschwemme. Irgendwelche Rezeptempfehlungen? Jedenfalls ist diese Suppe nach dem akuten Herbsteinbruch jetzt genau der richtige Seelenwärmer. Aufgepeppt wird das ganze mit etwas Kokosmilch und Kreuzkümmel und dann wunderbar cremig püriert.

Vor zwei Jahren: Birnen-Vanilla-Tarte
Möhrensuppe mit Kokosmilch
nach einem Rezept aus der Lecker 01-2005
für 4 Personen
Zutaten:
- 500 g Möhren, geschält
- 250 g mehlige Kartoffeln, geschält
- 2 EL Butterschmalz
- 750 ml Hühnerbrühe
- 200 ml Kokosmilch
- 1 TL Kreuzkümmel
- ein Schuss Zitronensaft
- Meersalz, Pfeffer
Möhren und Kartoffeln würfeln.
In einem mittelgroßen Topf das Butterschmalz schmelzen und das Gemüse kurz anbraten. Mit der Brühe ablöschen und aufkochen. 20 Minuten köcheln lassen, bis das Gemüse weich ist.
Mit dem Pürierstab fein cremig pürieren.
Die Kokomilch und den Kreuzkümmel dazugeben und nochmal kurz durchpürieren. Den Zitronensaft unterrühren. Mit Salz und Pfeffer abschmecken. Sofort servieren.
Besonders lecker mit Croûtons oder Backerbsen.

Carrot Soup with Coconut milk
adapted from Lecker 01-2005
for 4 people
Ingredients:
- 500 g carrots, peeled
- 250 g floury potatoes, peeled
- 2 Tbsp clarified butter
- 750 ml chicken broth (für die vegetarische Variante: Gemüsebrühe)
- 200 ml coconut milk
- 1 tsp cumin
- a dash of lemon juice
- sea salt, black pepper
Cube the potatoes and carrots.
Melt the clarified butter in a large saucepan and sauté the vegetables for a few minutes. Add the broth and bring to a boil. Simmer for 20 minutes, until the vegetables are tender.
Purée finely with an immersion blender.
Add the coconut milk and the cumin and purée again. Stir in the lemon juice and season with salt and pepper. Serve immediately.
Even more delicious with croûtons.
