Das Wald- und Wiesen-Kochbuch von GU gibt Rezepte an die Hand wie man mit wildem Kraut, Obst oder Pilzen leckeres zubereitet. Außerdem gibt es Hinweise und Tipps zum Sammeln. Dabei werden pro Saison ein paar wilde Lebensmittel herausgesucht, die dann beleuchtet werden. Manche mit mehr Bildern, andere nur mit Rezepten. 

Gleich beim ersten Durchblättern war ich schwer begeistert! Das Buch trifft meinen Geschmack! Ich mag die Gestaltung und die natürlichen tollen Fotos! Daneben haben mich aber auch die Rezepte angesprochen! Fast jedes würde ich gerne nachkochen. Die Rezepte sind abwechslungsreich und das Buch ist gespickt mit neuen Ideen. Chapeau! 

Kniffelig wird es, wenn es darum geht die Zutaten zu besorgen. Gut Bärlauch bekommt man noch auf dem Markt oder inzwischen sogar in vielen Supermärkten. Aber bei allem anderen muss man wohl tatsächlich in die Natur. Leute mit Garten haben hier wieder Glück, denn der Giersch der hier in vielen Rezepten ein zu Hause findet, findet sich als Unkraut verunglimpft auch in vielen Gärten. Also einfach ernten und essen! Anschließend könnt ihr Euch gleich an der Brennessel laben!

Ohne Garten gilt es: raus in die Natur und suchen! Und zwar nicht nur das richtige Kraut, sondern auch in einer hundefreien Gegend. Das ist schier unmöglich und so muss man halt einfach mal vor eventuellen Eventualitäten die Augen verschließen.

Brennessel erkenne ich ja noch, aber dann wird es schwierig, denn ich möchte gerne Waldmeister haben. Leider hält das Buch nur Rezepte bereit, aber keine Tipps zum Sammeln. Ich befrage also das Internet, denn ein Sammelbuch habe ich leider nicht. Nachdem ich einige Gewächse aussortiert habe, finde ich etwas das den Beschreibungen entspricht. Ich pflücke und hoffe. Man könnte den Waldmeister ja besser an den Blüten erkennen, leider soll man ihn vor dem Blühen ernten. Irgendwie unpraktisch für dieses Jahr!

Mir fehlen in diesem Buch lediglich die Hinweise auf’s Sammeln der Zutaten (ein paar wenige werden vorgestellt). Denn wer sich so ein Buch kauft, kennt sich wahrscheinlich mit den Zutaten noch nicht aus und möchte sich nicht noch ein Buch kaufen (ich bin aber schon so angefixt, dass ein professionelles Sammelbuch her muss). Daher wären hier Standortipps mit genauen Bildern der Pflanzen und Pilzen sinnvoll. Auch ein Hinweis auf ähnliche Pflanzen (evtl. sogar giftige!) wäre hier angebracht. Gerade auch bei Pilzen bin ich sehr vorsichtig und möchte genauere Instruktionen. 

Alles in allem aber ein tolles Buch, das ich sehr empfehlen kann! Ich finde die Idee „Unkraut“ zu essen klasse, ebenso wie Pflanzen zu verarbeiten, von denen man nicht wusste, dass sie essbar und schmackhaft sind!

The Wald- und Wiesen-Kochbuch by GU provides recipes for cooking with wild herbs, fruit or mushrooms. Also it contains some hints and tips for collecting them. Every season some wild groceries are selected, which are then highlighted. Some with pictures, others just with recipes.

I was thrilled when first browsing through the pages! This book totally suits my taste. I love the design and the great natural photos! But also a lot of recipes addressed me. I would try almost everything in the book. The recipes are rich in variety and the book is spiked with new ideas!

It’s getting tricky to get all the ingredients. Ok, wild garlic is an easy one, but for all the other stuff you have to go outside into the nature. If you have a garden you might be lucky, because you might have goutweed in it, mostly known as a weed. But it is edible! And after eating all the goutweed, go on and harvest some stinging nettle!

Without a garden you’ll have to go outside for a little herb hunt! And not only the right wild herbs, but also a dog-free area is necessary. As you never know, sometimes it’s necessary to turn a blind eye.

I know stinging nettles, but after that it’s not so easy anymore. But I want to pick some woodruff! Unfortunately this book only provides recipes, no tips for picking the woodruff. So I turn to the internet, because I don’t own an identification book, yet. After sorting some plants I find something which fits the descriptions. I pick it and hope. It’s easier to recognize the woodruff by its flowers, but it’s recommended to pick it before it blooms. Quite unconvenient for this year!

The only thing missing in this book are some hints and tips for collecting the ingredients. If you buy a book like this, you don’t know the ingredients, I guss and you don’t want to buy another book, yet (although I’m hooked and I will definitely buy an identification book). So some location tips and detailed pictures of the plants and mushrooms would be useful. Also a hint that there might be similar (or even toxic) plants out there would make sense. Special caution should be payed when collecting mushrooms and I want to have detailed instructions for that!

Nonetheless this is a great book, which I can recommend a lot! I want to use everything I can, so the idea to eat „weeds“ is great, as well as using plants I would have never known to be edible and tasty!

There is not much to say about this dish. It’s easy and quick. It’s light. It’s one of those dishes, that are great for evenings, when you don’t want to stand in the kitchen for an hour or even a half. Just because you don’t want. Or because you are that hungry, that you cannot concentrate on something else than being hungry. Well that’s me… sometimes.

 It’s also one of those dishes, that are great, when you have nothing at home, unless some mushrooms (I take it for granted, that pasta and cream are always in the pantry/fridge).

For those occasions one needs to have something up the sleeves. Like mushroom pasta.

 As I have nothing more to say about this wonderful emergency dish, I recommend you to have a look in Shauna’s new cookbook, which I just received as a belated Christmas gift. As I’m flipping through the sites and looking at recipes like „potato-mushroom-tart“ or „chicken braised in red-wine“ or „chocolate-peanut butter brownies“, I’m really glad I already prepared some of the dinner tonight. Because hungry cooking is not my kind of style, as you already may’ve guessed. Anyway the cookbook is full of delicious recipes, which are in addition to that all gluten-free – naturally or intended. Altogether great compositions.

So if you have now spend too much time reading food blogs, instead of making dinner/lunch, go ahead for some mushroom pasta!
