Diese Woche ist wieder die Jeden Tag ein Buch – Woche! Ich habe bereits bei der ersten Veranstaltung vor einem Jahr mitgemacht, damals mit einem Gastbeitrag im Kleinen Kuriositätenladen. Jetzt geht JTEB bereits in die 3. Runde und ich möchte mich mit der ein oder anderen Buchrezension beteiligen.

Heute möchte ich Euch Restlos!: Clever kochen mit Resten von Hildegard Möller aus dem Kosmos Verlag vorstellen! Das Buch beschäftigt sich mit dem Verwerten von Resten, sei es Gemüse, Obst, Fisch oder Fleisch. 

Die Idee finde ich super! Viel zu viele Menschen schmeißen Lebensmittel weg, die noch gut sind, einfach weil sie nicht wissen was man mit den Resten noch anstellen kann,weil sie zu viel gekauft haben oder weil das Mindesthaltbarkeitsdatum abgelaufen ist.

Gegen letzteres hilft einfach dran riechen und kosten! Das bringt niemanden um! Ich habe schon Crème fraîche verwendet die 2 Monate abgelaufen war, die war tipptopp!

Gegen zu viel kaufen hilft nur weniger kaufen ;). Auf jeden Fall bewusster kaufen: brauche ich das wirklich? Für was brauche ich das? Verwende ich das alles bis ich das nächste Mal einkaufen gehe? Wenn man ungeübt im Einkaufen ist hilft es auf alle Fälle eine Liste anzufertigen. So schlendert man nicht durch alle Regale und packt ein was einen anspricht und vergisst dabei die wesentlichen Dinge. Es spart also nicht nur Lebensmittel und Geld, sondern vor allem deine Zeit (und Nerven!)!

Gegen das erste Problem „was mache ich mit den Resten?“ soll dieses Buch helfen.

Die Aufmachung ist wie immer bei Kosmos wunderschön! Aber die Rezepte werden durch das Design natürlich nicht besser ;). Das Buch ist eingeteilt in Gemüse, Pasta & Kartoffeln & Reis, Obst, Fisch & Fleisch und Brot-„resteverwertung“. 

Ich muss zugeben, dass ich selten Reste von etwas habe. Ich weiß wieviel Nudeln und wieviel Reis ich für ein Gericht machen muss. Überhaupt mache ich meist mehr bei allen Gerichten, denn dann kann ich die Reste am nächsten Tag zur Arbeit mitnehmen. Manche Rezepte kann ich also nur machen, wenn ich vorsätzlich Reste produziere. Aber im Endeffekt spricht es natürlich für mich, dass ich keine Reste habe. Trotzdem kann ich die Rezepte natürlich als „normale“ Rezepte verwenden. 

Es gibt einige leckere und interessante Rezepte in diesem Buch, aber keines hat mich bisher wirklich dazu angeleitet Reste zu verkochen. Meistens kaufe ich dafür ein. Mich störte es auch einige Male, dass ich zum Verwerten einer einfachen Zutat wieder außergewöhnliche Sachen brauche um daraus ein relativ simples Gericht zu machen. Für mich gehört zum Reste Verwerten auch, dass ich nicht noch extra dafür einkaufen gehen muss. Aber für die Kopfsalatsuppe ist Limette und ein wenig Kokosmilch gefragt. Ich finde das etwas umständlich und so geht es mir bei ein paar mehr Gerichten. Warum muss ich um ein Stück Käse zu verbrauchen 5 neue Lebensmittel anbrechen/einkaufen?

Anregend sind für viele sicher so Sachen wie Pesto aus verschiedenem Grünzeugs ( Radieschenblätter, Möhrengrün,…) und Smoothies aus Gemüse und Obst, aber mir ist das irgendwie zu wenig. Eine meiner liebsten Ideen in dem Buch ist übriges Grünzeug (Salat- oder Spinatrest o.ä.) in einen Pfannkuchenteig zu pürieren. Simpel, aber effektiv. Und für Pfannkuchen habe ich doch immer alles da! Der Dip dazu wäre für mich die ultimative Resteverwertung, denn da kann ja alles rein was weg muss: Quark, Frischkäse, Joghurt, saure Sahne, Crème fraîche, kleine Gemüsereste geraspelt, Käsereste geraspelt, Kräuterreste, die Liste geht immer weiter.

Bereits nachgekocht habe ich Pasta mit Fenchel, Gurken-Lachs-Tagliatelle und Sellerie-Nuss-Rösti mit Äpfel und Quark. Das Sellerie-Nuss-Rösti fand ich sehr lecker. In den Gurken-Tagliatelle sind keine Tagliatelle drin, sondern „Nudeln“ aus Gurken. Ich habe noch Tagliatelle untergemischt, weil mir das zu wenig war, aber für den Sommer stelle ich es mir sehr erfrischend vor. Die Pasta mit Fenchel war in Ordnung, aber nichts Besonderes. 

Anfangs war ich begeistert von dem Buch, nun weiß ich nicht mehr recht was ich damit anfangen soll. Aber für viele ist das Buch sicher ein guter Anstoß in die richtige Richtung, denn manchmal reicht der um einfach ein bisschen weiter zu denken oder um die Ecke.

Von mir gibt es 3,5 von 5 Punkten: Design und Fotos top, Rezepte gut, Intention lobenswert, bei der Umsetzung ist noch Luft nach oben!

Today I want to introduce you to Restlos!: Clever kochen mit Resten (Completely: Cooking clever with leftovers) by Hildegard Möller from the Kosmos publishing house! The book is about using leftovers from vegetables, fruit, fish or meat.

I love the idea! People are throwing way too much groceries away, which are still good, just because they don’t know what to do with the leftovers or because they bought too much in the first way. Another reason is an expired best before date.

The best thing to do against the last reason is take a sniff and taste it! This doesn’t kill you! I already used crème fraîche, which was expired over two months. It was perfect!

Buying too much groceries? There’s only one way to do better: buy less ;). Ok, buy more conscious: do I really need this? For what will I need this? Do I use everything of this purchase until the next time I go groceries shopping? If you are unpractised in grocery shopping it definitely helps to make a list beforehand. So you won’t up ending strolling through every aisle and packing in the cart what appeals to you. And then you forget the important stuff. In the end it does not just save food and money, but also your time!

This book shall help against the first problem: what do I do with the leftovers?

The design and layout is beautiful, as the cookbooks by Kosmos always are. But recipes do not improve through design ;). The book is divided in vegetables, pasta, rice, fruit, fish, meat.

I have to admit I seldomely have leftovers. I know how much pasta or rice I have to make for a dish. Mostly I make more of an dish so I take the leftovers to work for lunch. So I could only make some recipes of this book, when I produce leftovers with purpose. But in the end it speaks for me that I don’t produce leftovers. Nonetheless I can use these recipes as „normal“ recipes.

There are interesting and delicious recipes in this book, but none of these encouraged me to use up leftovers. Mostly I have to go shopping for them. From time to time I was even fed up, because I needed some special groceries to make a simple dish. In my opinion using up leftovers means, that I don’t have to go shopping first. But when I need to make a soup from a butterhead lettuce I also need lime and a bit of coconut milk. That’s quite inconvenient and it occured to me with some other recipes, too. Why do I have to buy/open 5 other groceries to use up a bit of leftover cheese?

I think it’s quite inspiring for most people to make pesto from different greens like radishes or carrots and making smoothies from vegetables and fruit, but it’s not enough for me. One of my favourite ideas from the book was using leftover greens (like salad or spinach or whatever) to purée it into pancake batter. Simple, but effective! And you always have everything at home for pancakes! An accompanying dip would be the perfect use for leftovers, because you can add everything that has to be used up: quark. cream cheese, yogurt, sour cream, crème fraîche, vegetable leftovers grated, cheese leftovers grated, herbs, and the list goes on.

First I was very enthusiastic about this book, now I don’t know anymore how to handle it. But for a lot of people this book might be a push in the right direction, because sometimes this is enough to think a bit further or laterally.

I give this book a score of 3,5 of 5 points: design and photos are great, the recipes are good, the intention is worthily, but there is still room in the realization.
