Bei mexikanischem Essen bin ich die Erste die „hier“ schreit! Ich liebe Tortillas, Quesadillas, Tacos und Co!

Für dieses köstliche „Fingerfood“ habe ich schwarze Bohnen in einer rauchig-würzigen Tomatensauce eingekocht. Auf einem Bett von Salat, lassen die warmen Bohnen den Käse schmelzen und werden getoppt von süß-saurer cremiger Avocado. Einfach ein Traum!

Sofern man Tortillas daheim hat kann man sich aus ein paar frischen Sachen wunderbare schnelle Gerichte zaubern! Dabei kann man auch noch den Kühlschrank leeren und ein paar Reste verputzen.

Die Tortillas bereite ich nach meinem altbewährten Rezept zu, vakuumiere sie portionsweise und friere sie ein. So habe ich immer einen schönen Notfallvorrat zu Hause. Aufgetaut sind sie bis die anderen Zutaten vorbereitet sind.

Vor einem Jahr: Möhrengrünpesto mit Kürbiskernen

Vor vier Jahren: Apfel & Vanille Madeleines mit brauner Butter

Vor fünf Jahren: Kürbis-Apfel-Suppe

Vor sechs Jahren: Apfeltarte

Tortillas mit schwarzer Bohnen-Mole und marinierter Avocado

ergibt: 4 Tortillas (ausreichend für 2 Personen)

Zutaten:

  • 1 Dose schwarze Bohnen, abegtropft
  • 150 g passierte Tomaten
  • 1 eingelegte Jalapeño, fein gehackt
  • 1/2 TL Chipotleflocken oder 1/4 TL gemahle Chipotle
  • 1 Salatherz, z.B. Romana
  • 1 Avocado
  • 1 EL Olivenöl
  • 1 EL Limettensaft
  • 1/2 TL flüssiger Honig
  • Meersalz
  • schwarzer Pfeffer, frisch gemahlen
  • 150 g Bergkäse, sehr gut passt auch Manouri, alternativ: Mozzarella
  • 4 Weizentortillas

Die Bohnen mit den passierten Tomaten, Jalapeño und den Chipotleflocken in einen kleinen Topf geben und köcheln lassen bis die Sauce dickflüssig ist. Eventuell mit Salz abschmecken.

Den Salat waschen, schleudern und in breite Streifen schneiden.

Die Avocado in Würfel schneiden und in eine Schüssel geben. Olivenöl, Limettensaft und Honig in einem Glas mit Deckel schüttel bis sich der Honig aufgelöst hat (oder den Honig vorher leicht erwärmen). Das Dressing zur Avocado geben, mit Salz und Pfeffer würzen, vermengen und ziehen lassen.

Den Käse grob reiben. Manouri oder Mozzarella in Stücke zerteilen.

Die Tortillas in einer Pfanne aufwärmen.

Sofort servieren und mit den Zutaten belegen. Die Tortillas zusammenklappen und genießen.

I am the first to shout „here“, if there’s mexican food involved. I love tortillas, quesadillas, tacos and co!

For this delicious „fingerfood“ I reduced the beans in a smoky spicy tomato sauce. On a bed of lettuce the beans will melt the cheese and are topped with sweet, sour and creamy avocado. It is a dream!

If you have tortillas at home it is so easy to whip a quick dish together with some fresh produce! Perfect for using up some leftovers and cleaning out the fridge.

I make the tortillas according to my trusted recipe, evacuate them in portions and freeze them. Like this, I always have an emergency supply at home. Until the other ingredients are prepared the tortillas are thawed.

Tortillas with Black Bean Mole and marinated Avocado

yields: 4 tortillas (enough for 2 people)

Ingredients:

  • 1 can black beans, drained
  • 150 g tomato purée
  • 1 pickled jalapeño, finely chopped
  • 1/2 tsp chipotle flakes or 1/4 tsp ground chipotle
  • 1 lettuce heart, i.e. romana
  • 1 avocado
  • 1 Tbsp olive oil
  • 1 Tbsp lime juice
  • 1/2 tsp liquid honey
  • sea salt
  • black pepper, freshly ground
  • 150 g cheese (i.e. mountains cheese), manouri would be also great, alternatively: mozzarella,
  • 4 wheat tortillas

Place the beans with the tomato purée, jalapeño and the chipotle flakes in a saucepan and bring to a boil. Reduce the heat to a simmer and cook until the sauce is reduced and thick. Season with salt, if necessary.

Rinse and spin the salad. Cut into broad stripes.

Cut the avocado in cubes and place in a bowl. Mix the olive oil, lime juice and honey in a jar and shake until the honey is dissolved (you can also warm the honey a bit beforehand). Add the dressing to the avocado, season with salt and pepper and fold in. Let it rest.

Grate the cheese coarsely or tear the manouri or mozzarella into pieces.

Warm the tortillas in a skillet.

Serve immediately and put your tortillas together. Fold them and enjoy!
