I am the first to shout “here”, if there’s mexican food involved. I love tortillas, quesadillas, tacos and co!
For this delicious “fingerfood” I reduced the beans in a smoky spicy tomato sauce. On a bed of lettuce the beans will melt the cheese and are topped with sweet, sour and creamy avocado. It is a dream!
If you have tortillas at home it is so easy to whip a quick dish together with some fresh produce! Perfect for using up some leftovers and cleaning out the fridge.
I make the tortillas according to my trusted recipe, evacuate them in portions and freeze them. Like this, I always have an emergency supply at home. Until the other ingredients are prepared the tortillas are thawed.

Tortillas with Black Bean Mole and marinated Avocado

yields: 4 tortillas (enough for 2 people)
Ingredients:
- 1 can black beans, drained
- 150 g tomato purée
- 1 pickled jalapeño, finely chopped
- 1/2 tsp chipotle flakes or 1/4 tsp ground chipotle
- 1 lettuce heart, i.e. romana
- 1 avocado
- 1 Tbsp olive oil
- 1 Tbsp lime juice
- 1/2 tsp liquid honey
- sea salt
- black pepper, freshly ground
- 150 g cheese (i.e. mountains cheese), manouri would be also great, alternatively: mozzarella,
- 4 wheat tortillas
Place the beans with the tomato purée, jalapeño and the chipotle flakes in a saucepan and bring to a boil. Reduce the heat to a simmer and cook until the sauce is reduced and thick. Season with salt, if necessary.
Rinse and spin the salad. Cut into broad stripes.
Cut the avocado in cubes and place in a bowl. Mix the olive oil, lime juice and honey in a jar and shake until the honey is dissolved (you can also warm the honey a bit beforehand). Add the dressing to the avocado, season with salt and pepper and fold in. Let it rest.
Grate the cheese coarsely or tear the manouri or mozzarella into pieces.
Warm the tortillas in a skillet.
Serve immediately and put your tortillas together. Fold them and enjoy!
